共沸とは液体の混合物が沸騰する際に液相と気相が同じ組成になる現象です。
このような混合物を共沸混合物といい、この時の沸点を共沸点という。通常の液体混合物は沸騰するにしたがって組成が変化し、沸騰する温度が徐々に上昇していくが、共沸混合物の場合は組成が変わらず沸点も一定のままである。このことから定沸点混合物ともいます。
水-エタノール混合物の例で述べたように、共沸が生ずると蒸留による混合物分離はできなくなります。しかし圧力を変更したり、第三成分を追加することにより共沸混合物の組成を変化させることはできます。
